It is surely the queen of salted roe, with an intense yet mild marine flavor and a very thin skin covering it.
They come from the mullet (Mugil cephalus), a very abundant fish, but with meat that is not very commercially appreciated.
However, its roe is highly recognized in Italy and Spain.
Curiously, the meat of this fish is being used in the production of sausages as if it were a type of marine chorizo.
